Instructions
  1. Heat 4 tbsps. of oil in a pan and fry the peanuts. Remove the fried peanuts and keep aside.
  2. In same oil add bay leaf, potato and cauliflower. Stir for few minutes.Then add salt and sugar. Mix well.
  3. Add turmeric and red chili powder, cook for 2-3 min and add ginger and green chili paste, stir it.
  4. Add green peas and fried peanuts. Cook covering it until potatoes are tender. If required add very little water. The curry should be dry but not like fry.
  5. Now add garam masala powder and roasted cumin powder. Remove from the heat and keep it cool.
  6. Mix flour and salt and soda bi carb into a bowl.
  7. Add 2 tbsps. oil and enough water to make dough. Knead the dough until smooth and roll into a ball.
  8. Divide the dough into equal small sized balls and roll out into a medium size oval shape. Divide it into two equal pieces with a knife.
  9. Brush each edge with a little water and form a cone shape, sealing the wet edge.
  10. Fill the cones with the potato-cauliflower curry and press the two wet edges together to seal the top of the cone.
  11. Deep fry the samosas in hot oil (medium heat) until crisp and brown
  12. Take out and drain on a paper towel.

Serve hot with your favorite chutney or tomato ketchup.
