Gajor ki Halwa
Instructions
  1. Wash, peel and grate the carrots (I used the medium blade of grater to grate).
  2. Boil the grated carrots in the milk, for 2-3 minutes to make it little soft; remove from heat and keep aside.
  3. Heat ghee in a thick bottom pan and add cardamom and bay leaves.
  4. Add the boiled carrots and cook for 5-7 min. Stir the mixture continuously.
  5. Carrots should be tender and slightly changed in color.
  6. Add the condensed milk and cook until the mixture become little dry. This will take about 8-10 minutes.
  7. Next add the sugar and stir-fry for another 3 to 4 minutes until the halwa starts leave the side of the pan.
  8. Add chopped dry fruits and mix well.
  9. Garnish with chopped almond.
