Instructions
  1. Wash the rice and soak in enough water for 30 minutes
  2. Drain the rice,marinate with sugar,turmeric powder,salt and 1 tbsp ghee. Leave it for 20 min
  3. Heat remaning ghee in a pan.Add raisins and cashew nuts and fry until golden brown.
  4. Keep the fried raisin and cashew aside. Add more ghee into the pan and when heated add bay leaf, cardamom, cinnamon and cloves.
  5. Add the grated ginger or ginger paste and fry a little.
  6. Add the rice, fry for 5 min gently to mix with the flavours.
  7. Pour 4 cups of warm water along with remaning sugar.
  8. When the water dries up and the rice is well-cooked add the cashews and raisins.Mix gently
  9. Pour rest of the ghee, mix gently and cover the pot. Add saffron milk(optional).Turn off the flame.
  10. Serve Basanti Pulao hot.
