Basanti polao
Basanti Pulao or sweet yellow rice is a traditional Bengali recipe made especially for festivals or special occasions. Made using Gobindobhog rice, turmeric and saffron, this sweet rice is a delight to eat. Here is how to make Basanti Pulao Recipe.

Ingredients
- 2 cup Gobindo bhog Rice
- 4 tbsp Clarified Butter (Ghee)
- 15 pieces Rasins
- 15 pieces Cashew Nuts
- 3-4 Cardamom
- 2-3 Whole cloves
- 2 inch Cinamon Stick
- 4 tbsp Sugar (or as per taste)
- 2 Bay leaves
- 1 pinch Salt
- 2 tsp Turmeric Powder
- 4-5 starnds Saffron : (optional)
- 2 tbsp Milk
- 1 tsp Ginger paste

Instructions
- Wash the rice and soak in enough water for 30 minutes
- Drain the rice,marinate with sugar,turmeric powder,salt and 1 tbsp ghee. Leave it for 20 min
- Heat remaning ghee in a pan.Add raisins and cashew nuts and fry until golden brown.
- Keep the fried raisin and cashew aside. Add more ghee into the pan and when heated add bay leaf, cardamom, cinnamon and cloves.
- Add the grated ginger or ginger paste and fry a little.
- Add the rice, fry for 5 min gently to mix with the flavours.
- Pour 4 cups of warm water along with remaning sugar.
- When the water dries up and the rice is well-cooked add the cashews and raisins.Mix gently
- Pour rest of the ghee, mix gently and cover the pot. Add saffron milk(optional).Turn off the flame.
- Serve Basanti Pulao hot.
